N2 - Enhancing productivity and efficiency in dairy processing is crucial for maintaining the safety and quality of dairy products. This necessitates the implementation of smart solutions. With the advancement of technologies such as the Internet of Things (IoT) and Artificial Intelligence (AI), there is a growing interest in smart dairy processing. Dairy processing plants generate massive amounts of data, making it impractical to send everything to remote cloud centers for processing. To address this, we propose a smart solution called Edge-centric Industrial Internet of Things (IIoT). It brings data processing closer to where it is generated, making it more efficient. Our platform incorporates IoT, Edge-AI, and smart sensors to optimize dairy processing. We have tested the developed platform through three major use cases, such as 1) Monitoring milk quality in real-time, 2) Predicting when maintenance of equipment is required, and 3) Using gestures to control robots for performing lab experiments. The technologies suggested in our work provide improved real-time solutions for smart dairy processing. By adopting these smart solutions, dairy processors can improve productivity, reduce downtime, and lower operational costs.
